Parmesan Hamburgers/Italian Chicken and Potatoes
I love to cook. Honestly, if I never went back to a job outside the home, I would be happy just raising babies, keeping house, volunteering and most of all...cooking! Cooking is one of those things I've truly been able to focus on and become much better at. I study recipes and figure out how to make them better. Well, at least so that I and Bobby will like them more, lol. Tonight's recipe: Chicken Fettucine Alfredo. I haven't made this before without using a premade sauce, so this should be fun! If it comes out worthy, I will post the recipe I use for you.

Grilling season is upon us, so what better than a hamburger recipe? These were so darn good! We really loved having something other than an ordinary hamburger. Photo Sharing and Video Hosting at Photobucket

We took our hamburger meat and seasoned it with:
Garlic Powder
Onion Powder
Salt
a handful or two of Shredded Parmesan Cheese

As for the Parmesan Cheese, make sure it is fresh and use your best judgement as to how much to add. You don't want to overdo and have a little burger with your cheese. Mix it all together! Throw it on the grill (or in your skillet) and cook until done. Afterwards, throw a slice of Parmesan Cheese on and melt it. We were out of the slices and used the shredded on top. We had to nuke it in the microwave, but these were delicious. Thanks, Kraft!

After five, things go crazy around here with Aidan wanting food, the phone ringing, Bobby coming home, cleaning up last minute things, so this gives me a total relief! And it is delicious, too.

Italian Chicken and Potato Bake
I found this in one of my kraft cooking magazines, and had to add to it and change it up a bit.

4 leg-quarters
1-1/2 lb. potatoes (about 3 med. potatoes), cut into thin wedges
Zesty Italian Dressing
1/4 cup Grated Parmesan Cheese
Italian seasoning
Garlic powder
Onion Powder
Cajun Seasoning
Salt

I used 6 pieces, but feel free to keep the original 4 mentioned above. Wash your chicken first and stab it. Yes, I said stab it. This allows our seasoning to get down in to. Just make a few knicks in it, don't butcher it. It is already dead, ya know? I put the 6 leg quarters into a pan and sprinkled them with the onion powder, garlic powder, salt, italian seasoning, and cajun seasoning. Pour some of the dressing (I chose light dressing) over the chicken. Kraft recommends 1/4 c, but I find this isn't enough. I very lightly cover mine until I am satisfied. Cover and let marinate a few hours.

I took 2 large potatoes, washed them and began chopping them up. Kraft called for wedges, but we like them smaller. I cut the potatoes into small chunks and place these into a bowl. Sprinkle the garlic powder, onion powder, italian seasoning, salt and cajun seasoning. Honestly, I do not measure out my seasonings, so I can't offer an exact amount. I think sprinkle the Italian dressing over the potatoes and mix it in. Add the above again if necessary for the potatoes on the bottom. Once this is coated to my liking, cover and let marinate a few hours.

Ready to cook? Preheat your oven to 400! Place the potatoes and chicken in one pan, sprinkle with fresh parmesan cheese, cover with foil and put it in the oven. Bake for 30 minutes and then remove the foil. cook for 30 more minutes or at least until the chicken is cooked thoroughly.

Grab you some veggies and voila. Yummy dinner.



We are getting a POOL THIS WEEKEND!!!!! WOOOHOOO!! We are all so excited. Everyday this week, Aidan says good-bye to his Daddy and asks, You going to get my pool, Daddy? Every evening, he greets Bobby with a "where's my pool, Daddy? I can't find it! You lost it??!" He has also informed us that when he gets his pool he is inviting "people" over. Yeah. I asked who these people are and he say, uh People, Momma. Silly, me.

Aidan's getting better on the potty, thank, God! He is standing up and although he still has some pee pee accidents, it is getting better. I found this and laughed so hard. I am sure my poor baby will have to experience this at least once in his life. Poor boys.
